The purpose of the kitchen operation is to provide the
inmates with a variety of professionally designed menus. Currently, the Jail
Facility is contracting Summit for all meal services.
The Food Service Director, an employee of Summit , is
responsible for the overall nutrition and operation of Food Service. A Certified Dietician plans the
menus and forwards them to the Food Service Director. The menus are designed to
meet recommended dietary allowances and follow the Food Guide Pyramid. The
regular menus exceed 2800 calories per day.
A special needs menu is also available to address
diabetic, low-fat and allergy issues. The Jail Facility kitchen provides in
excess of 3100 meals each and every day and is a place where inmate workers can
learn food service skills, which could assist them in seeking employment upon
their return to the community.
